Aside from being free, the OSs are really stable and safe and the primary reason to offer you all three of them is to ensure that you will be able to run any app that you'd like, since different pieces of software have different requirements regarding the environment they can be used on. Each of the three OSs is supported by a large community of web developers who have made many hundreds of software packages which you can set up and use on your VPS. Based on the Operating System that you select, you will also be able to select between 3 different Control Panels to manage your hosting content. Of course, if you decide that you need another OS, we can always reinstall the server with it. As a paid upgrade, we also offer you weekly updates of the OS for optimum stability and security.
